PROBLEM: You made homemade ricotta cheese and don’t know what to do with all of that leftover whey.

SOLUTION: Make a loaf of peasant bread. It’s simple, it’s easy, and using the whey in place of water infuses a subtle sour flavor (I don’t think I was just imagining that) as well as healthy proteins.

You can find any number of recipes for the one-time working-class staple online. I happened to use the Food Network’s No-Knead Peasant Bread recipe for this loaf, substituting in 1 ½ cups of warmed whey in place of the water.

  1. That looks delicious. Was it what you thought it would taste like? Like a sour dough taste?

  2. It definitely didn’t qualify as sour dough, although I think there was a hint of a tang to it. Nevertheless, the bread was indeed quite tasty (and eaten quickly).
